These low carb Chocolate Souffles are so easy to make. Simple ingredients come together to make these impressive little dishes. If you have never made a low carb Chocolate Souffle, then today is the day!
Have you ever had chocolate souffle? As a child growing up in Canada, chocolate souffle was always served on Christmas Eve. I remember how I would stand in front of the oven, watching as the souffles would slowly rise right before my eyes. At the time, I thought it was magic and have since dreamed of creating a healthy, low carb version of this "magical" dessert!

Where does the term Souffle come from?
The term "souffle" comes from the French word "to puff". This dessert dates back to the mid-1800s and was perfected when Paris ovens started using heated air drafts rather than coal as their heat source. As the popularity of souffle grew, so did the number of ways to prepare them. By the late 1800s, savoury and sweet souffles could be found on every fine dining restaurant menu across New York City.
What makes a Souffle a Souffle?
Although the thought of making a souffle can seem quite intimidating, the truth of the matter is that it is relatively easy and does not require any fancy ingredients. A chocolate souffle is simply made of eggs, separated and whipped and then cooked for 15-25 minutes. Knowing the simplicity of the ingredients as well as my deep love for the dish, I knew I had to attempt to create a healthy, low carb version.
Ingredients for my Low Carb Chocolate Souffles
Most of the ingredients are straight forward and are probably already in your pantry and fridge. The only ingredient that you may need to get is the cream of tartar. Frontier Cream of Tartar is by far my favourite for the sheerthickness and volume that it gives my souffles.
A byproduct of the wine-making process, cream of tartar is an acidic powder that is typically used to stabilize eggs and creams as well as adding volume and thickness to the final product. It can also be stirred into caramel sauce to help reduce the re-crystallization of the sauce. As for the nutritional content of 1 teaspoon of cream of tartar, it contains only 8 calories and 2 grams of carbohydrates making it perfect for low carb recipes.

- Baker's Unsweetened Chocolate:one of the richest sources of polyphenols. Polyphenols have been shown to help increase blood flow to the brain, help to reduce inflammation as well as help to improve cholesterol levels.
- Eggs: rich in selenium, vitamin D, B2, B6, B12 and minerals such aszinc,ironandcopper. They are also considered a complete protein as they contain all the essential amino acids.
Souffles are quick to deflate so timing is everything. Prepare the chocolate component ahead of time. Right before dinner is served, whip the egg whites and fold into the chocolate mixture. Place the souffles in the oven while eating dinner and the souffles should be ready as soon as dinner is done!

Ingredients

- 2 oz Baker's chocolate, unsweetened, finely chopped
- ½ cup unsweetened almond milk
- 3 eggs, separated and at room temperature
- ¼ tsp cream of tartar
- ⅛ cup Stevia
- ⅛ cup Swerve confectioner
- butter and granular erythritol for lining ramekins
Instructions
- Preheat oven to 375 degrees F. As oven is preheating, grease individual ramekins with butter and sprinkle butter with granular erythritol.
- Place chocolate in a large bowl. Warm milk until it simmers and pour over chocolate to melt. Stir milk and chocolate until fully incorporated. Let cool. Add in egg yolks and stir until fully combined.
- In a separate bowl, add egg whites and cream of tartar and sugar. Beat egg white mixture until stiff peaks form.
- Gently fold egg whites into chocolate and continue to fold carefully until fully incorporated
- Pour into greased ramekins and bake for approximately 20 minutes or until souffles have risen about 1 inch.
- Serve immediately
